Homemade Macaroni Cheese Sauce

Macaroni cheese is not high on my favourites list. Ok, it doesn't get anywhere near making my favourites list. The kids, however, seem to think quite highly of it. Why should I deny them such a simple pleasure?

Homemade Macaroni Cheese Sauce

*Enough sauce for up to 350g pasta


---Ingredients--- 

1 cup diced bacon *optional
2 Tablespoons plain flour
2 Tablespoons butter/margarine
2 cups milk
1 teaspoon American mustard (yellow mustard)
½ teaspoon paprika
Pinch of white pepper
1 cup grated tasty cheese

---Method--- 

•Put your pasta on to cook as per package instructions.
•In a small to medium saucepan, cook bacon, remove from pan and set aside.
•In the same pan, over a medium heat, combine flour and butter and stir continuously for 2 minutes. Continue stirring adding the milk ¼ cup at a time until you have a smooth sauce thick enough to coat the back of the spoon.
•Turn heat down to low and mix bacon mustard, paprika and pepper through then stir in cheese until melted.
•Drain pasta, combine with sauce and serve.
