Tomato and Veg Pasta- The $1 dinner

Nutrient rich Family Meal for around $1 a serve.
Fast, Cheap and packed with nutrients.

With so many 'fancy' food ideas running through our heads, we can often lose sight of those cheap, simple recipes which are packed full of goodness.
It is necessary for me to run a pretty tight ship, not as tight as some but certainly tight.
With a grocery budget of around $600 a month for a family of 5, meals like these are a saving grace.

Tomato and Veg. Pasta

400g can diced tomato
2 Tablespoons tomato paste
1-2 cups veg- eg. broccoli, mushroom, zucchini, carrot, pumpkin, spinach- whatever you like cut into small pieces or grated.
2 cloves Garlic crushed
2 teaspoons olive oil
1 teaspoon sugar
2 teaspoons Italian herb mix
Salt and pepper to taste
1/4 cup water
250g pasta
***Depending on portion sizes you may use more or less.

*In a large pot, cook pasta as directed on package.
*Meanwhile, in a medium pot heat oil, lightly fry vegetables and garlic.
*Add can of tomato, sugar, water herbs and salt/pepper if desired, stir through well.
*Simmer 15 mins.
*Dish pasta onto plate or bowl, spoon sauce over the top.
*Top with parmesan cheese **optional
