Delicious and Simple Banana Cake

125g butter OR 100mls cooking oil
95g raw sugar (1/2 cup/4oz)
2 eggs
5mls vanilla essence (1 teaspoon)
3 medium ripe bananas, mashed
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
125mls of milk (1/2 cup/4oz)
440g self raising flour (2 cups/16oz)

For 22cm round cake tin - bake for 50 minutes

• Preheat oven to 170°C
• Cream Margarine and sugar together
• Add eggs, one at a time, beating well until combined.
• Mix in Vanilla essence, spice and banana
• Alternate adding milk and flour a little at a time mixing well after each addition.

Loaf tin - bake for 40 minutes
Muffin tin - makes approx 24 - bake for 20 minutes
