Homemade Burger Buns

A homemade burger deserves a fresh baked hamburger bun and this soft bread roll recipe is the perfect solution. Soft and fluffy with just the right amount of salt and sweetness, the way bread should be. Soft Burger Buns Makes 8 ---Ingredients--- 12g dry yeast  ( 3 teaspoons) 20g caster sugar  (1 teaspoon + 3 teaspoons) 125mls warm water  (½ cup) 125mls milk  (½ cup) 1 large egg 30mls vegetable oil (6 teaspoons) ½ teaspoon salt 450g plain flour (3 cups, firmly packed) 15-20g butter (1 tablespoon) ---Method--- •Place yeast and 1 teaspoon of sugar in a small bowl and gently whisk in warm water. Set bowl aside in a warm place for five minutes or until mixture bubbles into a froth on top. •In another small bowl or jug whisk milk, egg, oil, salt and remaining sugar together. •Combine both mixtures and in a large bowl/standing mixer, mix flour with wet ingredients until mixture begins to come together. Originally, I had thought this would be great recipe for using up leftover burger patties but, as time (and burger nights) went by, I realised how ridiculous the notion was... There's no such thing as leftover patties! If, by some miracle, you do happen to have some, just break or dice them into small pieces. Cheeseburger Scrolls Makes 22 ---Ingredients--- Need a yoghurt free dough recipe? Try this one. Scroll Dough 1 cup Greek or Natural Yoghurt 2 cups Self Raising Flour 1 teaspoon Caster Sugar Filling 1 Tablespoon oil 300g Beef Mince ½ teaspoon Salt  ½ teaspoon Pepper 1 medium Brown Onion, finely diced 60mls* Tomato Sauce (¼ cup) 30mls* American mustard (⅛ cup) *according to your tastes 2 cups grated Tasty Cheese ---Method--- •Pour yoghurt into large bowl. Add sugar to flour and mix flour into yoghurt, ½ cup at a time until dough is a rollable consistency. You may need to add a little more flour if dough is too sticky . •Roll d

Pancake, Hotcake, Dropscone? Who cares?! Scotch pancakes contain raising agents for a thick and fluffy result.  And so, in order to be foodatomically correct, I dub thee Scotch Pancakes. Rise and be fluffy! What's in a name? Would not a flat cake by any other name taste just as sweet - or savoury? Scotch Pancakes 2 cups self raising flour 1/3 cup caster sugar 2 teaspoons vanilla essence 2 eggs 1 ¼ cups milk (+ a little more) * Optional * ¼ cup chocolate (chips, shaved or chopped)  •Whisk all ingredients,  except   chocolate,  together. Mixture should form a thick but pourable batter. If too thick add small amounts of milk until smooth and pourable. • Heat a large frypan/skillet to medium high. • You can use a small amount of butter or oil if necessary to keep pancakes from sticking to the base. • Using a soup ladle or large spoon, spoon mixture into frypan - about ¼ of a cup per pancake. Damper, otherwise known as Bushman's Bread, is Australia’s soda bread. Traditionally this bread was made from nothing more than flour, salt and water, making it a convenient option for drovers and stockmen who needed to rely on non perishable ingredients while travelling. Thankfully I've never had to traverse the Australian outback without an Esky, or even a car for that matter. We love this bread with soups, casseroles or even just smeared with butter while the bread is still warm. Fresh bread is at it's best when it's still warm. Spiced Hot Crossed Buns

It's Easter and that means two things, Chocolate and Hot Crossed Buns. Of course, the magic bunny brings the chocolate, so all I have to worry about is the buns. Do you remember when Hot Crossed Buns were full of flavour? A quick warning, these buns are not something you can just 'whip up' in a hurry. Blueberry and Cinnamon Scrolls

Blueberries are one of those superfood thingos, you know those foods that are packed with antioxidants, other fabulous vitamins and minerals and apparently cures whatever ails you, but don't let put you off. They may be good for you but they are also absolutely delicious. Here in Sydney, blueberries are in early season so by next month we will be enjoying the price drop and fresh local produce *happy dance*. Cinnamon also has some pretty special qualities but don't let that fool you! These scrolls, with all their added bonuses' are still ideally occasional treats.

These muffins are so easy to make it's ridiculous!  I stumbled across this recipe by accident when I forgot to put eggs into one of my favoured muffin recipes.

YIAH Coconut White Chocolate Pistachio Muffins

This is one for my YIAH family. I love the way the pistachio flavour really shines though in this recipe. If you're looking to make this dairy free, I would use coconut oil instead of butter, Black Forest Dukkahs and either use a milk or dark Chocolate powder or skip it altogether. If you use a different combo, I'd love you to tell me about it in the comments.

Breakfast Muffins

The morning rush is a crazy time.  You have to get yourself out of your nice warm bed and leave behind that sweet dream (mine usually consisting of some form of peace and quiet) and enter into the chaotic world of preparing the family for another productive day. The importance of breakfast is widely known and yet I will admit, most mornings I reach for the cereal and throw a few slices of bread in the toaster. I know I should do better but just look at the time! Miss 2 is having a tantrum on the kitchen floor because her toast has been cut into triangles instead of squares. Mr 4 is refusing to drink his juice because it's in the wrong cup (when will I learn) And Mr 13 is refusing to get up at all!! Of course this is just the beginning, no matter how organised we think we are, they will find a way to challenge our beloved household order. I love spending time in the kitchen with my husband, there's something so satisfying and enjoyable about creating something special together. When i say getting creative in the kitchen I am, of course, talking about food just to be clear.  Combining two of my favourite things in one place. Last year my talented understudy made some pretty nice Hot Cross Buns, nice enough for me to request a repeat. I think he knocked it right out of the park this year with this recipe though. Perfect mix of spices and fruit and the density is just right.

Divinely easy to make and way to easy to eat!! Mr3 couldn't stop saying "More please Mummy." (pssst...You may want to make two) Focaccia Dough ---Ingredients--- 1 teaspoon white or caster sugar 8g (.25 oz) dry yeast -approx 2.5tsp 2/3 cup luke warm water 2 cups plain/bread flour 1/4 teaspoon salt 2 teaspoons Italian Herb mix Topping choice depends entirely on your own liking: Leave it plain or drizzle with a little olive oil and sprinkle with salt. Fresh basil, tomato and cheese is my favourite. Make a pizza like topping with a tomato base, pepperoni, olives, mushroom, cheese..... ---Method--- •In a small bowl, gently stir sugar and yeast in water. Stand until bubbles rise, about 10 minutes. •In a large bowl, mix flour, salt and herbs then add yeast mix, combine well. If mixture doesn't combine, stir in additional water, 1 tablespoon at a time, until all of the flour is absorbed. •Turn dough out onto a lightly

Taco Muffins

I'm so pumped about this recipe that I'm writing it up before I've even tasted the finished result. This is a leftovers inspired creation. We always end up with a small amount of beef left over when we have tacos. Sometimes it gets used for lunches but other times it just sits in the fridge until clean out day. I've been racking my brain trying to think of something to do with it and now, I'm sure I have the solution.
