Rum Balls - with rum!

When is a rum ball not a rum ball?
When there's no rum in it!
Fear not, dear Recipe Seeker, these rumballs are rum rich, delicious and extremely messy easy to make.

Choose whichever method works for you, I know which one I prefer.


Rum Balls
Ingredients
400g Madeira or butter cake - staled
1/3 cup Almonds -chopped
1/3 cup Glacé Cherries -chopped
1/4 cup Walnuts -chopped
1 1/2 Tbs Cocoa powder
40-60mls Rum
Sweetened Condensed Milk approx 1/3 cup at room temperature.
Chocolate dollarettes

Alternative Directions:
• Combine all dry ingredients in a large bowl and add rum and enough sweetened condensed milk to make mixture a good rolling consistency. (If the weather is warm add  a little more as the condensed milk will firm in the fridge).
• Roll mixture into balls and coat with dollarettes.
• Refrigerate for at least an hour, will keep well for a week or two (they never last that long)
