Apple Pie Rosettes

I'm not usually one for decorative cooking, food presentation would be one of my weak points, It's probably a subheading under 'Lack of attention for detail' but these just seemed too good to be true so I jumped on the Apple Rose bandwagon and here is the result.

Apple Pie Rosettes
(Makes10)

2 sheets puff pastry
2 large apples
1.5 cups apple pie filling (puréed)
Preferred flavoured sugar to sprinkle

•Preheat oven to 170°C
•Core and slice apples, in half and then thin slices
•Put apple straight into water and a bit of lemon juice to prevent discoloration. -enough water to cover apples. Microwave for 3-4 minutes or until apple is just soft enough to bend. (You can simmer on the stove top if you prefer)
•Drain off liquid.
•Roll out each puff pastry sheet, keeping rectangular shape (pastry won't cook through if too thick) and cut into 5 strips about 3-4 cm wide.
•Smear each strip
with Apple Pie filling

•Lay apples along top edge of pastry strip
•Fold pastry strip up lengthways, then roll it up and see the magic happen before your eyes.

•Place each Rosette in a muffin tin and sprinkle with flavoured sugar.
•Bake for 40 minutes
