Sweet Potato Puffs


On my journey to improve the quality and nutritional value of our family meals I have come across a number of self proclaimed experts who will blog about 'healthy food' in such a way that
I, as a regular home cook on a shoestring budget, end up feeling completely inadequate as a mother let alone a cook.

Enter the refreshingly different Kidgredients!
Finally, a healthy food blogger without pretension has found it's way into my reading list and I am really enjoying what the lovely Kylie has to offer. Kidgredients core is removing packaging and hidden nasties by getting back to raw ingredients. I highly recommend the read.

The original idea for this recipe came from Kidgredients 5 Ingredient Potato Puffs which can be viewed here.
Kylie was kind enough to advise me that swapping out the potato for sweet potato could be problem due to the lack of starch (gee she's clever) so I opted for a 2:1 ratio of potato and sweet potato.
Although the density of the sweet potato caused the puffs to deflate a little, the result was still a crispy outer shell with a soft tasty center. 
How can you go wrong with sour cream and chives?

Sweet Potato Puffs


---Ingredients--- 

About 850g Potato (3 large potatoes)
About 400g Sweet Potato
2 Tablespoons Sour cream
2 Tablespoons Chopped Chives
1 cup Grated Tasty Cheese

---Method--- 

• Peel and chop potato and sweet potato.
• Boil potatoes for about 10 minutes before adding sweet potato. Boil for about another 10 minutes until potatoes are soft and mashable.
• Drain potatoes well.
• Add all ingredients to pot and mash well.
• Preheat oven
• Refrigerate until cool - makes the mash firm enough to form balls OR just spoon heaped teaspoons of mixture on to a lined or lightly oiled baking tray.
• Bake for 20 minutes or until crisp around the edges.

**If you wanted to pretty these up then I would recommend piping the mixture onto the tray for some fancy gems.
