Homemade Mayonnaise

T45 Mayonnaise- with lime
makes approximately ⅔ cup

1 egg
10mls white wine vinegar (2 teaspoons)
just white vinegar is OK too.
½ teaspoon sugar
⅓ cup low flavour oil*
1 pinch each of salt and white pepper (to taste)
10mls lime juice (2 teaspoons)

•Whisk egg, vinegar, sugar together.
•Gradually add oil, continue whisking with each addition. Continue whisking until Mayo thickens enough to coat the back of a spoon.
•Stir in lime juice and season with salt and pepper to your liking.
•Refrigerate for at least 30 minutes.
Will thicken to a creamy consistency when chilled.
