Thai Peanut Sauce
2 teaspoons coriander root -can substitute ground coriander if necessary.
1 small red chilli
2 cloves garlic
*all the above, finely chopped.
1 Tablespoon sugar
2 Tablespoons white vinegar
⅓ cup smooth peanut butter
¼ cup coconut milk
•Combine coriander root, chilli, garlic, sugar and vinegar in a small saucepan.
Stir over medium heat until sugar is completely dissolved.•Reduce heat to low and stir in peanut butter and coconut milk until well combined. Remove from heat immediately.**It is important not to overheat as the oil will split from the peanut butter.
