A good Vanilla Cake is a must have recipe for any home Baker. The lightly crisp crunch on the outside and a soft fluffy center make this vanilla cake recipe my all time favorite and most turned to when I need something sweet, simple and elegant.
Perfect iced for birthday cakes and cupcakes, sugar dusted or drizzled with warm custard on a cold night. I hope you enjoy it as much as we do.
125g cooking margarine
1 cup caster sugar
2 teaspoons vanilla essence
2 cups self raising flour
⅔ cup milk
•Preheat oven to 170°C
•Cream margarine and sugar together.
•Mix in egg and vanilla until well combined.
•Alternate adding flour and milk stirring after each addition to create a smooth thick batter.
-Scoop about a tablespoon of batter into each greased cupcake hole and bake for 15 minutes
•Pour into a greased/lined 22cm round cake tin (or equivalent volume tin) and bake for 35-40 minutes.
Cake is ready when it springs back from a light press in the center.
